The story: Ready for a satisfying breakfast regardless of your dietary preferences? Try our Garlic Scape Scramble in either the vegan version or omnivore version (with eggs). Garlic scapes are a long curly stem that grows from hard necked garlic. It is, in fact, the garlic’s attempt to go to flower. If we leave it alone and do not remove the garlic scape, it will eventually straighten out and produce a purple flower that is delicious and edible. The down side to leaving them on there is that it reduces the size of the garlic bulb dramatically, so rather than let that happen, we cut them off in the month of June and enjoy them in various dishes. Vegan version:
12 stalks of Garlic Breath Farm’s certified organic Garlic Scapes
1 tbsp Olive Oil
1tbsp soy sauce
2, 12oz packages of firm tofu
½ cup Nutritional Yeast
1 cup sliced mushrooms (optional)
Omnivore version:
12 stalks of Garlic Breath Farm’s certified organic Garlic Scapes
1 tbsp Olive Oil
6 large eggs
1 cup sliced mushrooms (optional)
½ cup grated cheddar
Preparation
Directions
1. If you are preparing the vegan version, press your tofu or wrap tightly in paper towels to absorb. Set aside.
2. Chop up the Garlic Scapes ¼ inch pieces (approximately)
3. Chop up the (optional) mushrooms
4. Heat 1tbsp of the olive oil over medium heat
5. Sautee the scapes and (optional mushrooms) in the olive oil for 5 minutes, or until they brown a bit (the more you cook the scapes the milder the bite it will have, so use your discretion)
For the next step:
6a. (Vegan) If you are using tofu, crumble it into the pan with your hands, and stir into the scapes and oil. Next, mix in soy sauce
6b. (Omnivore) If you are using eggs, whip them in a separate bowl and then pour into the scape/oil mixture
Finally:
7a. (Vegan) Stir in the nutritional yeast
7b. (Omnivore) Stir in the shredded cheese
8. Enjoy!
