The story: Compound butter is a fun way to use the garlic scapes and herbs that enter your kitchen in the month of June. You love butter anyway (don't lie to yourself) so you might as well give this a try and lather it on some freshly bakes sourdough bread. And yes, even vegan butter rocks for this application! Kissometer level: Wear a mask like it's 2020.

8oz softened butter, with salt (2 sticks)
1 tbsp Chives
1 tbsp Parsley
1 tbsp bunch Thyme or Dill (whichever you prefer)
Preparation
Directions:
The long step: Begin by softening the butter to room temperature. (Do not microwave or you will end up with a sloppy mess.)
Prep the garlic scapes by discarding any woody ends, if they have some.
Grind up garlic scapes in a high speed blender or food processor.
Add the rest of the herbs and pulse 3-4 times.
In a bowl, combine the softened butter with the herbs. Mix well.
If your butter was unsalted, you may want to add salt at this time.
Plop your beautiful butter mixture onto some parchment paper and roll into a log.
The even longer step: Cover in a second layer with plastic wrap and let cool for an hour, or even overnight.
Enjoy! You will want to eat this up within 3-5 days.
