The story: Ever agree to do a garlic cooking show and you design the menu based on what produce the host has an overabundance of? Well, that's how we came up with this beauty, and you are sure to enjoy! As a side note, the traditional way to cook gnocchi is to boil it in a pot of water. I do not recommend that for this dish as it is the browning in the butter that really helps to lay the foundation of flavors you will experience in this dish. Kissometer level: You didn't want a partner anyway. Let's be honest...you enjoy your alone time.

2 lbs of gnocchi (no dairy or egg)
Vegan butter – 1/3 cup
Lemon juice 1/4 cup
Basil - 1 bunch
Garlic – 1/4 cup
Vegan Parmesan – 1/4 cup
Zucchini- 1 largeÂ
Salt – to taste
Preparation
Directions:
1.     Chop zucchini into bite sized pieces.
2.     Chop basil into ribbons
3.     Grind garlic
4.     Fry gnocchi in large pan with the butter.
5.     Add garlic after 5 minutes and cook for 1 minute to soften.
6.      Once everything is toasted, remove from heat.
7.     Mix the remaining butter, zucchini, salt, lemon juice, basil and parmesan to gnocchi.
